Creative and Unique White Wines from Paso Robles | Monochrome Wines with Winemaker David McGee

In this video, I visit Tin City in Paso Robles, California, to meet with David McGee, owner and winemaker of Monochrome Wines. David shares his passion for crafting distinctive white wine blends that showcase the diverse terroir of the region.

Discover the story behind Monochrome Wines and David's unconventional path to winemaking. With a background in aerospace, medical fields, and consulting, David brings a fresh perspective and innovative approach to the traditionally stodgy and tradition-bound world of wine.

Throughout the tasting, Austin and David explore a range of unique white wine blends, each with its own character and charm. From the Albariño and Gewürztraminer blend "Barrel Distortion" to the Gewürztraminer-dominant "North by Southwest," and the rare Albillo Mayor-based "By the Book," inspired by the white wines of Ribera del Duero, Spain.

David shares his winemaking philosophy, which centers on avoiding producing the same wine over and over again. By utilizing different fermentation techniques, such as skin fermentation, barrel fermentation, and stainless steel, David crafts a spectrum of white wines that challenge the notion of what white wine can be.

As the tasting continues, Austin and David discuss the flexibility that comes with not owning vineyards, allowing David to source grapes from various locations and experiment with different varieties and blends each vintage. This approach results in a lineup of wines that can be radically different from year to year, reflecting David's creativity and passion for exploration.
